Recipes -Quick N Easy 

Here is a recipe I love all year, but especially good in summer with all the fresh fruits and veggies. Be sure to dice the fuits and veggies so you can get more in.
Calico Fruit Salad
1 quart cottage cheese, 1 cup whipped cream or 1 cup whipped cream cheese, 1/2 - 1 cup of each fruit desired -peaches, canned pineapple, cherries, raisins, dates, apples, mandarin oranges, grapes, plums, pears, cantaloupe, honeydew, watermelon, bananas, apricots, figs, grapefruit, mango, papaya, and any I may have missed :-) Mix all together in large bowl, chill and serve. Play around with spices you like such a nutmeg, cinammon, allspice and others for a unique flavor burst.

Calico Veggie Salad
1 Quart cottage cheese, 1 cup either sour cream or mayonnaise, 1/2 - 1 cup of each desired vegetable: (Fresh is more desirable than canned here) Asparagus, Beets, Carrots, Cabbage, Celery, Green Beans, Green Onions, Green Peppers, Jicama,  Onions, Peas, Tomatoes, Sweet Peppers, Sweet Potatoes or yams,  and any I may have forgotten. Mix all in large bowl season with salt and pepper, and as before play around with other spices for that great flavor treat - garlic powder or blend, Mrs. Dash, Onion powder, and so much more.

Quick Peanut Butter Cookies
2 cups peanut butter, 2 cups sugar, 2 eggs
Mix all together, drop by teaspoon onto ungreased cookie sheet, bake at 400 degrees, for about 8-12 minutes, until lightly browned. Let cool and enjoy.
